and 4 organic chicken bouillon cubes as I am doubling and revising the recipe.

I cubed 5 large chicken breasts. I do this when they are partially frozen for easy work.

Add meat to broth. I had the broth heating while I was cutting the meat.

I added 4 tsp cumin...

Pepper to taste. (Remember I am doubling my recipe).

Stir in spices.

Cover and cook on md low (once boiling) for 20+ minutes until chicken is done.

While chicken is cooking, add 1 cube butter to skillet.

Add 2 cans Hatch chopped green chilis. The recipe calls for jalapeños and bell peppers also...

but I left these out due to preferences. Next, chop 1 onion.

Add onion to butter & chilis.

Add 2 cloves garlic.

While chili/onion mixture cooks to transparency. Place 8 oz cream cheese in medium bowl.

Place in microwave 20 seconds at a time until you can stir easily.

While cheese still heating measure 1/2 c heavy whipping cream.

Add to heated, softened cream cheese and stir until smooth.

Add vegetables to chili.

Add cream mixture to chili.

Stir until well blended. If not thick enough add xanthum gum.

Top with grated cheese and enjoy!
