Ingredients Oat flour Coconut flour Coconut sugar or brown sugar Coconut oil Salt Limes Lime zest Coconut milk Maple syrup Egg yolks
Combine ingredients for the shortbread in a bowl and stir until no clumps remain.
Pour the crust into the baking dish and spread evenly with a spatula or your fingers. Bake the crust for 10-12 minutes
Add all of the filling ingredients, aside from lime zest to a bowl
Whisk to combine or use a hand mixer
Stir in the lime zest then pour the filling over the crust and bake for 15-20 minutes. Let cool and chill overnight
