KFC Arabian Rice! Mamas Special Recipe.
For 2.5 cups rice approx 650 gms:5 green and black cardamoms,7 cloves,1 large cinnamon, 7-8 black peppercorns
4 tbsp butter and 2 tbsp oil in a pan and add the whole spices till it releases flavour and aroma!
2.5 cup/ 600 g approx Long grain basmati rice soaked in water for 30mins washed and strained the rice
Now add the rice and fry for a few mins.
Keep frying avoid burning rice.
Add 1 tbsp of chicken stock powder!
Then add homemade whole spice or Garam masala 1 tsp.
Then add 4-4.5 cups of water for cooking the rice
Check salt levels add more salt if needed
Once water boils add the Jillian cut carrots as needed.
When water evaporates and it’s ready for dum add the 1.5 green peppers Jillian cut. Mix
Now before leaving on dum remove 1/2 cup rice in a bowl add yellow food colour to them and mix them into the rice.
Sprinkle garam masala again towards the end and add the food colour mixed rice to the big pot of rice.
Remove large whole spices before serving to avoid biting on them.add 6-7 whole green chillies and leave on dum for 10 mins low flame.
After dum rice ready!
