Khara Kadubu (Stuffed Version)
In a heavy bottom pan, heat 2 cups of water

Add a teaspoon of Oil

Add 1/2 teaspoon of Salt

Let it come to a boil & add 2 cups Rice flour + 2 tablespoons Maida & mix swiftly

See to it that no lumps are formed. Sprinkle with a bit of water & close the lid for 2 minutes

Turn off the heat

Close the lid & let it sit for 5 minutes

Once cool enough to handle, transfer the dough onto a wide bowl

For about 3-4 minutes

Place it in a bowl

Cover with a damp kitchen towel

Add soaked Chana Dal, Toor Dal & Moong Dal into a Mixie Jar

Add 3 Green Chilies, chopped Ginger, 3 Dry Red Chilies

Add a dash of water & grind into a thick coarse paste

Transfer this mixture into a bowl

Add chopped Curry Leaves & mix

Make Small Discs of the dough

Coat it with Rice Flour

& Roll it gently

Into a slight elongated shape

Place a teaspoon of the mixture in the Center & seal the edges

Repeat the Process for other Discs as well

Add water into a basket & place a trivet inside

Place one more plate on top as shown

Close the lid & steam for 10 minutes

Let it cool down for 5 minutes before serving
