Kodiak Cakes Chocolate Chip Cookies
Gather your ingredients (listed in the full printable recipe card in the post)

Preheat your oven to 350 degrees Fahrenheit

Prep a couple lined baking sheets and a wire cooling rack

In a stand mixer on medium speed, cream the butter and brown sugar together

When the butter and brown sugar are creamed together it should look like this

Add the egg and vanilla extract

The batter should look like this after you incorporate the eggs and vanilla

Add the kodiak cakes pancake mix and oats to the batter and mix until blended evenly

Stop to scrape down the sides of the mixing bowl, if needed

Add in the chocolate chips (mini, regular or chunks) and combine on low speed

Have a small (number 70, 2 tsp) cookie scoop ready

Using a cookie scoop, scoop cookies onto a prepped baking sheet (should fit about 15 scoops per sheet)

Bake in a 350 degree preheated oven for 9-11 minutes

Finish scooping the remainder of the dough (it might take 3 cookie sheets to finish scooping the dough)

When the cookies are done allow them to cool a few minutes before transferring them to a wire cooling rack

Transfer the cookies to the cooling rack to further cool

Finish baking the rest of the cookies and enjoy your cookies (makes about 48 cookies)
