Kohakutou Crystals the Japanese Candies
We start boiling 300 gr / 10.6 oz. of bottle water.

We add 10 gr / 0.35 oz. of agar agar and stirr it until it is incorporated well and we have no lumps

Then we add the 450 gr / 15.87 oz. of sugar and we boil all for almost 5 minutes more.

The texture we need to have is like this.

We grease a container where we will put the mixture.

We put the mixture carefully trying to not make to many bubbles.

Now we can add the colours we want to give to our mixture and take it to the fridge for 2 hours.

After 2 hours we can take it out and cut it in sticks .

Or give them the form we want with cookies cutters.

Or just directly we put the mixture small molds.

We can let them to room temperature to dry for 7 days or use a dehydrator and dry them.
