Grate potatoes and onion using food processor or box grater.
Add to dish towel or cheesecloth and wring out as much liquid as possible.
Whisk breadcrumbs, baking powder, salt, pepper, and eggs in a large bowl.
Add potato mixture and stir until well combined.
Heat oil and drop large spoonfuls of latke mixture into skillet. Press down with spatula and fry.
Serve with sour cream and applesauce.
