Lemon Blueberry Cake in the Microwave
Juice 2 lemons into a medium bowl.

Add 3 eggs, 1/3c oil, 3/4c sour cream, 1t poppy seeds & a yellow cake mix then whisk together.

Oil the bottom of the RockCrok Dutch Oven.

Add the batter!

Top with 1/2c blueberries and put lid on.

Microwave 10 minutes!

Meanwhile, combine the juice from 1 lemon, 2C of powdered sugar and 1/4c blueberry jam

Remove RockCrok from microwave, take lid off and let sit 10 minutes.

Cut the cake.

Top with powdered sugar mixture.

Breakfast or dessert is served!
