Lemon Blueberry Loaf Cake
Add lemon zest to sugar and rub it into it to infuse

Toss blueberries with 1 tablespoon of flour

Add the lemon zest & sugar to large mixing bowl, whisk in the eggs & olive oil

Whisk in the yogurt, lemon juice and vanilla extract

Sift in the flour, salt and baking powder

Whisk until just combined

Fold in the berries

Pour batter into prepared pan

Smooth out the top of batter

Until golden and tester comes out clean - allow to cool

Make glaze - whisk together powdered sugar, lemon juice & cream until smooth

Drizzle glaze over loaf

Slice and enjoy!!
