Lemon Blueberry Pound Cake
Lemon Streusel:Add 5tbsp.butter, 1 tsp. salt to 1/3 cup sugar & 3/4 cup flour. Mix together.
Add zest from 1 lemon,1/2 tsp.lemon extract.Mix until crumbly & set aside.Preheat oven 350 degrees.
Add 2 cups butter beat on med for 2 min. Add 3 1/2 cups sugar. Beat on med for 2 minutes.
Mix together 6whole eggs plus 6 egg yokes.Discard the whites of the 2nd 6 eggs. Add 1 tbsp vanilla
Slowly add the eggs to the sugar-butter mixture. 1 tsp.lemon extract. Beat on medium for 2 minutes.
Add 1 tbsp.of flour to 2 cups of berries to keep the berries from sinking to the bottom of the pan.
Add 3 1/2 cups of flour with 1 tsp.of salt Add flour slowly beat for 2 min. after adding the flour.
Fold in the berries, Add batter to a greased Bundt pan. Add streusel topping.
Baked at 350º for 60 - 70min. Let it cool before removing from the pan.
Lemon Glaze: Add 1 tbsp.lemon juice to 1 cup of pwd. sugar.Mix & put it in a decorating bag.
