Lemon Cake🍋 Gluten Free/Dairy Free
Whisk very well the eggs, sugar, oil & lemon zest.
Add the water and 2 tbsp lemon juice. Whisk again.
Add the GF flour, BP, salt & cinnamon. Whisk until all is incorporated.
Perfect batter consistency, not too thick but not too wet. If yours is too wet add more GF flour, if it’s too thick add a bit of water.
Pour in a prepared baking pan. Bake on medium heat (around 230 degrees celsius) for 20-25 mins or until a toothpick comes out clean.
Meanwhile, stir the 1/4 cup of lemon juice with the desired amount of sugar, and place in the microwave till the sugar dissolves.
Poke the cake once it’s baked.
Pour the syrup on top of the HOT cake. You can put as much syrup as u like. Finally leave to cool completely.
I recommend serving the cake after it’s chilled in the fridge. Enjoy❤️
