Prepare your ingredients for the pastry before you begin.

Bring water and butter to a boil. Remove from heat and stir in flour and salt to form a ball.

Transfer to a mixer and add eggs one at a time.

Spoon 1-2 tablespoons of batter onto a baking sheet 2 inches apart.

Bake 20-25 minutes. Pierce with a toothpick to vent. Allow to cool.

Prepare the cream filling.

Add cream, sugar, lemon zest & juice in a mixer with a whisk. Beat 5-6 min until stiff peaks form.

Pipe cream into the center or cut tops off puffs and fill with cream. Replace top.
