Lemon Dill Salmon Burgers
Add half of your salmon to food processor (about 1.5 pounds total)
Pulse a few times to grind it up
Add the remaining salmon
1/4 cup white onion
1 tbsp capers
1/4 cup fresh dill
1/2 tbsp Dijon mustard
2 tbsp lemon juice
And a pinch of salt and pepper
Pulse 5-10 times to combine
Transfer salmon mixture to a bowl
Add 1/2 cup breadcrumbs
Mix it all up
Form patties with your hands - you can make 4 to 6 salmon burgers depending on how big you want them!
Cook in an oiled nonstick pan (instructions for grill in blog post)
Cook 3 minutes per side
Lemon dill yogurt sauce! Mix up 1/2 cup Greek yogurt, 2 tbsp olive oil, 2 tbsp chopped dill, 1 clove grated garlic, and pinch of salt
Add a dollop of sauce to toasted bun
Cooked salmon burger
A slice of tomato
Romaine lettuce
And the top of the bun!
