Lemon Olive Oil Cake (easy Food Processor Cake)
Whisk together the flour, baking powder and the salt

Place the light corn syrup and eggs in food processor and process until light and fluffy (or use a bowl & hand mixer)

Then stream in the sugar and mix until mixture starts to turn pale in colour

With the processor still going on low - spoon in the flour mixture

Then add the lemon zest

And then slowly drizzle in the olive oil continue processing until emulsified

Scrape down the sides of the food processor and pulse a couple more times - then you are done

Pour into prepare pan

Give it a few good taps on the counter to release any air bubbles and bake 50-60 min or until tester comes out clean and loaf is golden

While the cake is baking / make lemon syrup - add sugar

& lemon juice to bowl and microwave or heat on the stovetop stirring until sugar is dissolved fully

Once cake is done remove from oven and place on cooling rack

Immediately brush with syrup then allow to cool in pan 10 min

Remove from pan

Then brush the rest of loaf with the syrup and allow to cool completely

While its cooling make your lemon glaze - whisk together the powdered sugar and lemon juice until smooth

Drizzle or pour glaze over cake

Then slice and enjoy!
