Lemon Poppyseed Cupcake, Lemon Curd & Lemon Frosting

In a food processor add lemon zest

Until its turns pale yellow in color

In a bowl, mix all dry ingredients: flour, baking powder, soda and salt

In another bowl: mix all wet ingredients - eggs, butter, milk, lemon juice, sour cream. Whisk!

Combine wet and dry ingredients. Do not over mix

Line a muffin tray with paper and pour batter filling 3/4th way up. Bake at 375 for 5 mins. Reduce the temp to 350 and bake 11 mins.

Once done, take out the cupcakes from muffin tray, let them cool down.

Next is lemon curd filling. I used this one and it was pretty good!
