Lemon Poppyseed Muffins

2/3 C sugar & zest of 1 lemon. Rub together.

2 C flour, 2 tsp baking powder, 1/4 tsp baking soda, 1/4 tsp salt, 2 Tb poppyseeds

3/4 C sour cream, 2 eggs, 1 tsp vanilla, 1/2 C melted butter

Pour liquid into center of dry and fold just until it comes together. Do not over mix!

Divide into 12 muffin tins and bake at 400 for 16 minutes

1 C powdered sugar, 1 Tb lemon juice, 1 Tb milk, pinch of salt

Dip muffins in glaze while still hot
