Lemon Ricotta Pasta With Arugula
Cook pasta according to package directions

and reserve 1 cup of cooking water. Then drain and set aside

To the same warm pot add the ricotta, Parmesan cheese, lemon juice & zest, salt & pepper & mix/ whisk until combined

Whisk in 1/2 the pasta water to sauce until smooth

Add back the pasta to pot

and stir vigorously until pasta is well coated, adding the rest of the pasta water as needed

stir in the arugula

Then serve immediately with extra Parmesan, chili flakes and torn basil
