Lemony Chicken Orzo Soup
Heat olive oil in pot

Add leeks or onion, carrots, celery and sauté 5-8 mins until veggies are tender

Stir in the garlic, lemon zest and thyme or rosemary

And chicken breast (skip if using leftover roast/rotisserie chicken)

Simmer until chicken is cooked through then remove and shred and set aside

Add the orzo and simmer until cooked through

Stir in the spinach shredded chicken, squeeze of lemon juice (optional),

And the fresh herbs and simmer just another couple of mins until spinach is wilted

Bright lemony flavours with loads of veggies and shredded chicken

Serve with extra lemon slices, crusty bread and extra fresh herbs and enjoy!
