Lentil Avocado Salad
Add 2 Tbsp of oil to the Quick Cooker and select the seat function and start. Add 1 carrot, 2 ribs of celery, 1/4 sweet onion all diced

Sauté until veggies are soft

Add lentils and approximately 3 cups of water. You will want enough water to cover your lentils

Close your Quick Cooker and select the bean function. Then set time for 5 minutes and select start

Whisk together 1/4 cup Balsamic Vinegar, 1/4 cup Olive Oil, 1 Tsp Agave Syrup, 1 Lemon zest and juice. Add 1/4 Tsp red pepper

Add 1 cup roughly chopped Dried Cranberries and 1 diced Avocado

Garnish with fresh chopped parsley and serve
