Add mushrooms, onion, garlic, oregano, and red pepper to your skillet
Sauté for 2-3 minutes until mushrooms and onion are soft
Add fire roasted diced tomatoes and tomato sauce to the skillet
Add lentils and water
Bring mixture to a boil, then simmer for 18-25 minutes or until lentils are cooked
This is what it should look like once it’s cooked!
