Let’s Make Pumpkin Spice Pasta Dough
Combine flour, semolina, and salt in a mixer bowl. Whisk eggs, spices, and oil in a separate bowl.

Make a well in the center of the dry ingredients for the egg mixture.

Knead on medium until the dough is smooth and soft but not sticky. Add flour or water as needed.

Knead the dough into a ball, adding more flour if it’s sticky. Wrap and chill at least 30 mins.

Roll the dough into a long thin rectangle using a machine (hand crank or electric) or rolling pin.

Cut pasta sheets into noodles using a machine, by hand, or extruder.

Dust with flour and let dry flat or on a rack, or cook immediately (2-4 minutes).

Serve with simple brown butter sage sauce.
