Lime Jello Sugar Cookies
With a mixer, cream together 1 cup softened butter and 3/4 cup sugar.
Add in lime Jello mix, reserving 1 Tbsp for the frosting, if desired.
Add the eggs, one at a time, beating well after each addition and scraping the sides of the bowl as needed.
In a separate bowl, combine 1 3/4 cups flour, 1 tsp baking powder, and 1/2 tsp salt. Whisk together.
With mixer on low speed, gradually add the dry ingredients to the wet ingredients, mixing just until combined.
You should have a soft, pale green cookie dough.
Use a cookie scoop to scoop out rounds of dough. Roll them in your hands to shape into balls.
Then roll each dough ball in a shallow dish of sugar to coat.
Place each ball on a prepared baking sheet and use the bottom of a glass to flatten the tops slightly. Bake at 350 for 9-11 minutes.
After baking, you can leave them unfrosted for a simple and colorful sugar cookie...
Or you can top them with a frosting made with 1/4 cup softened butter, 1-oz cream cheese, 2 cups powdered sugar, 1-2 Tbsp milk, and 1 Tbsp Jello mix.
