Loaded Crustless Quiche
Spray a pie dish with cooking oil

In a sauté pan, melt 2 tbsp butter on medium heat

Add 1/2 cup chopped onion

Cook 3-5 minutes until soft

Add 1 cup fresh baby spinach and cook until just wilted

Pour spinach and onion mixture into the pie plate

Add 1/2 lb chopped cooked bacon

Top with 1 cup of steamed fresh broccoli crowns

In a large mixing bowl, add 6 eggs, 1 cup whole milk, and 8 oz shredded sharp cheddar cheese

Add 1/2 tsp paprika

Freshly ground pepper to taste

Stir until thoroughly mixed

Pour egg mixture on top of the veggie mixture

Bake at 350 degrees for 35-40 minutes

Allow quiche to set for 5 minutes and serve warm
