Get 2 fresh Lobster Tails or 3 Claws

Using Kitchen Shears, remove legs from Lobster.

Using Kitchen Shears, cut Lobster Shell down the middle also cut bottom shell.
Make a Steam Bath of 2 Lemon wheels, 3 cloves Garlic sliced thin & 3 Bay Leaves & a ts of Salt.
Steam Lobster in Double Boiler. This allows the Loster to pick up the flavors of the steam bath.
Allow your Lobster to cool until your able to work with it without being burned.
Remove Lobster from the shells.

Cut the Lobster into small bite size pieces.
Sauté the Lobster in 3 Tbs Butter & 1/4 ts of Salt. Coat the Lobster completely.
Melt 2 Tbs Butter slowly in a Cast Iron Pan. Do not brown the butter.
Place your Top Split Hot Dog Bun into the hot butter and began to brown the bread.
Brown your Bun on each side as well as the bottom in the butter. Do not Brown the top.

Spread some mayo into the Bun. As much or as little as you’d like. You don’t have to use mayo!
Fill the Roll with the Chopped Lobster and drizzle with Butter left in the pan.

Garnish with Chives or Thinly Sliced Scallions. You can also add a little squeeze of lemon. Enjoy!
