Wash and peel loquats and remove seed

Add 8 cups of loquats, 2 cups water and a cup of sugar, add more for desired sweetness

Add remaining loquats, cover and let it come to a boil about 4-5 minutes

Stir occasionally until soft, continue cooking for 2 more minutes

Use an immersion blender to break up chunks

Mix and make sure there are no big chunks

Boil jars and lids before storing, will last in the fridge for 2 weeks or 6 months in the freezer
