LOTUS BISCOFF COOKIES
Get the ingredients ready

Scoop 12, one tbsp-full of Lotus spread on parchment paper. Freeze an hour

Grind 12-14 Lotus biscuits into fine crumbs

In a bowl, whisk crumbs; flour; baking soda; salt; cinnamon

In another bowl, beat butter & Biscoff spread until smooth

Add brown sugar & granulated sugar. Beat till light & fluffy

Add in egg & vanilla essence. Beat till combined

Gradually add flour mixture. Mix until incorporated. Don’t over mix

Divide cookie dough into 12 balls

Use thumb to softly press down the center of each ball

Place frozen spread in the dent. Cover them, rolling into balls

Garnish with crushed cookies (optional)

Bake at 350F for 10-12 mins

Cool completely. Store in airtight jar
