Lotus Root, Kabocha, And Hijiki Salad
Ingredients:1 Lotus root, 1/8 Kabocha, 2 Tbsp Dried hijiki, 1 Tbsp Soy sauce, 1 Tbsp Sugar
Soak dried hijiki(2 Tbsp) in water for 10 minutes, and preheat an oven to 230C/446F.

Drain water out.

Cut kabocha into thin slices.

Peel and cut lotus root into thin slices.

Place the slices on a baking try, and roast for 7 minutes in the oven.

Add oil, hijiki, soy sauce(1 Tbsp), sugar(1 Tbsp), and stir fry until the sugar is dissolved.

Add roasted vegetables, cooked hijiki in a bowl, and toss.
