Lovely Lemon Bars!!
Zest enough lemon to make two tablespoons zest

Juice enough lemons to make one cup juice

Mix 1/2 lb unsalted butter with 1/2 cup granulated sugar

Add 1/8 teaspoon salt and 2 cups flour (a little at a time) to butter mixture

Shaped dough into ball and make sure your hands are flowered

Pat or roll out dough into large bar pan, chill, then bake at 350° for 15 minutes or until light brown. Let cool

For the filling, mix 6 eggs, 3 c. Sugar, zest, lemon juice and 1 c. Flour

Pour over crust; bake at 350° for 30-35 minutes, or until set

Once cooled, sprinkle with powdered sugar

Slice into squares or triangles
