Low Cal Creamy Chicken And Rice Soup
Cook garlic and shallots in butter on low heat until softened.

Add riced cauliflower, carrot, and celery.

Add chopped mushrooms.

Stir in chicken broth. Add salt and pepper to taste.

Add broccoli and wild rice and cook 5 minutes until broccoli is tender.

Pour milk into bowl. Whisk in flour until smooth.

Stir into the soup, and bring it back to a boil. Cook until it thickens.

Add the cooked chicken and heat through.

Add a little extra milk if it’s too thick. Serve with sour cream or plain yogurt, if desired.
