Low Carb Keto Green Bean Casserole
Cook bacon until very brown and crispy on each side
Transfer bacon to a paper towel & blot. Discard most of the fat in the pan reserving 1 Tbsp
To the same pan, add diced onions and sliced mushrooms. Cook until golden brown
Add in half & half, milk, cream cheese, salt and pepper. Bring to a boil
Meanwhile, add green beans to a pot of salted boiling water and cook until just fork tender
Once sauce has simmered and thickened, add in cooked green beans and coat well with the sauce
Add entire green bean mixture to a baking dish and bake in the oven at 350 for 15-20 minutes
Meanwhile, add cooked bacon to a small food processor. Pulse until small crumbs form
Sprinkle bacon bits onto the casserole and bake an additional 5 minutes
