Luau Salad With Coconut Lime Dressing
Cut the mango into small pieces.
Cut a red bell pepper into small pieces and add to the plate.
Peel the pineapple of all the skin.
We only need half of the pineapple. Cut into tidbits and add to the plate.
Cut jicama into smaller pieces.
Cut snap peas in half on a bias.
To make the dressing add coconut milk to a mason jar with agave.
Zest three limes.
Add the zest and juice of three limes to the jar.
Add salt, seal and shake to combine.
Add the fruits, vegetables and wonton strips to a bag of butter lettuce.
Top with cucumber and avocado (when you are ready to serve).
Top with macadamia nuts and dressing and toss to combine.
Garnish with mint and enjoy!
