Lyonnaise Potatoes (potatoes and onions)
Prepare your ingredients.
Peel and cut the potatoes into 1/4-inch thick slices. Place potatoes in a pot of cold water, bring to a boil for 2 minutes. Drain and air dry.
Add 1 tbsp butter to a large skillet over med heat. Add onions and cook, stirring frequently, until caramelized, about 10-12 min. Remove to a plate.
Add half the butter and potatoes to same skillet. Season with salt & pepper. Cook until golden, flip and repeat. Remove and repeat with second half.
Return all of the potatoes and the onion to the pan and cook 1-2 minutes to warm though.
