Make Creamy Eggplant & Caramelized Onion Dip
What you'll need

Eggplant
1-2 cups
Onion
3 cloves
Chopped Garlic
1/2 cup
Extra virgin olive oil
1/4 cup
greek yogurt
Cut eggplant into round disks

Salt the eggplant on both sides and place in the colander for 10-15 minutes. Then rinse and dry.

Coat eggplant in olive oil and sea salt and place into the oven preheated to 400F for 10 minutes

While the eggplant cooks - dice 1 cup of onion and the 3 cloves of garlic

Sauté onion and garlic in olive oil until brown (caramelized). Pro tip: add garlic in near the end.

Take eggplant out of the oven and remove skins. Combine eggplant with onions and garlic mixture

Mash up eggplant mixture with a fork and stir in the Greek yogurt.

Enjoy with some pita chips!
