Make Your Own Marshmallows!
Line a 9x13 pan with foil, and grease well with butter

Sprinkle 3 packages of unflavored gelatin over 1/2 cup cold water in a metal bowl. Set aside.

Add 1 cup of light corn syrup to a large saucepan

Add 2 cups sugar, 1/2 cup cold water, and 1/8 t. salt

Bring to a boil, stirring occasionally

Cook without stirring until a candy thermometer reads 240F (soft-ball stage). This takes some time!

Remove from heat and gradually add to gelatin

Beat on high speed about 15 minutes

Mixture should be thick and the volume doubled at the end

Add 1 t. clear vanilla extract and beat to combine

Spread into prepared pan. It will become firmer as you go—work quickly!

Cover and let stand for 6 hours or overnight

Coat a pizza cutter with cooking spray and cut marshmallows into 1 inch squares or smaller

Peel marshmallows off foil

Coat with sprinkles for fun! (Use the Brownie Pan for testing different kinds)

Soft and chewy, and pretty too!
