Manestra — Greek Orzo with Tomato & Chicken
What is Manestra?
What kind of Manestra are we going to make?
Season chicken with 1 tsp. each salt & pepper.

In a large pot over medium high heat, brown chicken thighs in 1 tbs. olive oil for 10 minutes.

Once chicken has browned, add chopped onion and sauté for 5-7 minutes.

Add garlic (I like to grate with a microplane) & oregano. Cook for 30 sec.-1 min., until fragrant.

Pour in the orzo and coat it with the other ingredients for 1 minute.

Stir in the tomatoes with 3 cups water.

Bring to a boil, cover and simmer for 8-10 min., stirring frequently to keep orzo from sticking.

Uncover, give it a good stir. Test to make sure your orzo is cooked. Turn off heat.

Add 1/3 cup kefalotiri (or pecorino romano cheese) and mix in.

Ladel out into bowls. Garnish with additional cheese, to taste.
