Mango Cheesecake Bars
Process coconut biscuits into crumbs - you can use graham cracker cookies or any cookies you prefer

Add the butter and pulse a few times until crumbs hold together when pressed

Empty out into lined pan & press it firmly into bottom of pan - bake & then allow to cool

Purée mango in food processor or blender

Place in a small pan, whisk in the corn starch- heat on medium whisking continuously until thickened

In a large bowl mix cream cheese until creamy and smooth

Add the condensed milk while you keep mixing

Then mix in the eggs one at a time

Then mix in the lemon or lime juice and the vanilla or coconut extract

In a small bowl whisk the purée with 1/4 cup of the filling

Empty filling into pan

And smooth until even

Pipe the purée over or dollop It over with a spoon

Use a knife or toothpick to swirl in the opposite direction

Until just set

Allow to cool completely and then refrigerate for 2 hours or overnight

Then slice and enjoy!
