Mango Chicken Curry
Chicken, carrots, cauliflower, curry paste, onion, coconut milk, mango, chicken stock, coriander and frozen peas.

Peel and chop the carrots.

Purée the mango in a blender.

Slice the onion.

Break the cauliflower down to florets.

Cube the chicken thighs.

Brown the chicken over high heat.

Add the onions and cook for 2 minutes.

Add the curry powder and coat the onions.

Add the carrots and cauliflower, coat well in the curry powder.

Add the stock and coconut milk.

Add the mango purée and mix.

Put the chicken back in and bring to the boil. Simmer for 15 minutes, or until the chicken is cooked through.

Add the peas and cook for 5 minutes more.

Sprinkle with coriander and serve with rice and naan breads.
