Mango Chutney With Stem Ginger
We need: mangoes, sugar, vinegar, onion, red chilli, stem ginger, garlic, coriander seeds, cumin seeds, cardamom, black onion seeds

Toast the cumin, coriander and cardamom seeds until fragrant.

Heat the sugar with the vinegar and chilli until sugar has melted.

Add the mango, stem ginger, onion, garlic and all the spices.

Stir everything together then heat on a gentle simmer for 45 minutes.

Mash the mango down a little to thicken the sauce.

Cook for a further 5 minutes.

Pour the hot chutney into sterilised jars and seal.

Store in a cool dark place for up to 6 months or...
