Mango Galette (infused With Ginger & Lime)
Place flour, sugar, salt and lime in bowl of food processor

Pulse a few times to combine

Add the grated/cubed and chilled butter and pulse a few time until it resembles coarse meal

Add chilled rum (dark or light)or water and pulse a few more times

Until dough starts to come together

Empty it out onto a layer of plastic wrap & form into a small disc. Chill for 2 hours or overnight

Peel mangoes - any method of doing so is fine - riper ones are harder to peel with a peeler

Trim bottom to stabilize. Then cut each cheek against seed and slice each cheek thin

Place in a bowl

Toss with sugar, lime juice and zest, ginger and coconut or vanilla extract

Flour surface/parchment paper, place dough onto it & roll out between two pieces of parchment paper

Transfer it to baking sheet and peel off top layer of parchment paper, sprinkle surface with flour

Place mango slices on the dough leaving a 1-11/2 inch border mounding them a bit in the middle

Fold the edges of the dough all around

Brush edges with egg wash

Sprinkle edges with brown sugar and bake for 30-35 minutes

Until golden

This is a versatile recipe-feel free to use any spice you like in it. Cardamom & cinnamon work too
