Mango Lemon Tart/bars
Place flour in food processor

Along with sugar

Pinch of salt and lemon zest or vanilla extract for a bit of flavour (optional) - process to combine

Add chilled butter and pulse (directions by hand in post)

until dough starts to clump up easily

Empty into either a 9 inch tart pan with removable bottom or a 8x8 square baking pan

Press dough into the bottom and up the sides for tart pan - in an even layer in 8x8 baking pan

Once done bake 15-18 min

Make filling - start by puréeing approx 2 mangos - (I used my mini chopper but a blender works too)

to get 1/2 cup mango purée

Add 4 egg yolks to medium mixing bowl & either whisk or mix until fluffy and creamy

Add in your condensed milk

Then the mango purée and lemon juice and zest. You could also add a touch of vanilla here too for extra flavour

Remove baked crust from oven

Pour filling into warm crust

Bake until mostly set another 15-20 min

Allow to cool 1hr then chill for another 1-2 hours to allow it to fully set

Then slice and enjoy - either dusted with powdered sugar or topped with whip cream

This recipe makes either 1 round tart or 1 square 8x8 tin of bars
