Mango Malai Cake (eggless)
Mix condensed milk, oil, cardamom, vanilla in a large bowl. Sift in dry ingredients, add water & mix

Preheat your oven and line or grease a baking dish.

This makes an 8 inch round or 9x7 rectangle cake

Bake for 40 minutes or until a toothpick comes out clean. Cool completely.

Get yourself a professional bowl cleaner. Put them to work 😉

In a bowl add the mango purée, you can use canned pulp/rus if you don’t have fresh mangoes.

Add the condensed milk

Followed by the evaporated milk, give it a good mix. Chill until ready to use.

Make your whipped cream. Don’t over whisk else you’ll end up with lumps. Frost your cooled cake.

Assemble: add a few spoons of mango milk mixture, a slice of cake and drizzle with mango purée.
