Maple Bacon Sweet Potato Hash
Peel and diced your sweet potatoes. Try to keep them about the same size for even cooking.
Dice the bacon and add to a large skillet over medium heat. Cook until crispy, about 10-15 minutes.
Remove the bacon w/ a slotted spoon to a paper towel-lined plate. Drain all but 2 T grease from pan.
Add the sweet potatoes and cinnamon. Cook 10-15 minutes or until fork tender.
Stir the bacon back in and drizzle on the maple syrup. Enjoy!
