Maple Glazed Sweet Potatoes

Preheat oven to 350 degrees. Peel & cube potatoes

Place potatoes in a shallow layer in a casserole dish

Whisk syrup, oil, tamari, vinegar & salt

Toss sweet potatoes. Cover with foil & bake for 30 minutes. Stir & bake until liquid is reduced

Toast panko in butter

Allow panko to cool on a baking sheet

Sprinkle sweet potatoes with panko & garnish with parsley
