Put 125ml sunflower oil in a small pan

Add 125ml maple syrup and warm through on a low heat

Add 400g of jumbo oats to a large bowl

100g chopped Brazil nuts

100g chopped walnuts or pecans

75g ground flaxseed ( linseed )

2 teaspoons ground cinnamon

Add the warm maple syrup and sunflower oil

2 teaspoons vanilla extract

Stir well until all the ingredients are coated with the oil/syrup

Put onto a large baking sheet lined with baking parchment

Bake in 160 degree Celsius oven for 30 minutes, stirring 2/3 times during the cooking time

Store in a kilner jar for up to 2 weeks and serve with Greek yoghurt and fruit
