Mix together oil, orange zest & juice, lime zest & juice, cilantro, mint, garlic, oregano, & cumin.

Place pork in a large ziplock bag or container with a lid.

Reserve 1/4 cup marinade. Add the rest to the pork. Marinate 8 hours or overnight.

Heat a large skillet on medium high. Add the pork ( discard the marinade). Cook until browned.

Transfer to a baking sheet. Bake 25-30 minutes. Let rest 5-10 minutes before slicing.
