Marinated Tofu Sushi

Press the water out of the tofu.

Mix scallions, garlic, ginger, brown sugar, soy sauce, and rice vinegar in a bowl.

Slice the tofu into 8 equal rectangles.

Add to the pan with the marinade and marinate 15 minutes per side.

Wash the rice. Cook for 15 minutes, then let sit for 10 minutes.

Mix sugar, salt, and rice vinegar in a bowl.

Fluff the rice with the sugar, salt, and rice vinegar seasoning.

Cook the tofu in a non-stick pan. 3 minutes per side.

Wrap the rice and tofu in a sheet of seaweed.
