Simple ingredients, use leftover mashed potatoes 🥔

Whisk 2 eggs

Add 1/3 cup sour cream and combine

Add a heaping cup of shredded cheddar cheese

Add 2 tablespoons of scallions

Salt and pepper the potatoes to taste

Combine all ingredients

Lightly spray your tin with oil

Use the scoop to easily fill each well

Ready for the oven

Bake at 400 for 20-25 min, should be golden brown and slightly firm

Yummmmm! Serve with sour cream and sprinkle of scallions
