Mashed Potatoes and Parsnips
Wash and peel the potatoes and parsnips and chop into large chunks.
Place parsnips and potatoes in boiling water in a saucepan and cook for 30-35 minutes, until tender.
Place the chunks in a large bowl and mash them, adding the salt, pepper, and butter as you mash.
Serve garnished with fresh herbs or a sprinkle of Parmesan cheese!
