Mashed Potatoes (Dairy-Free)

Peel and dice 6 large potatoes. Add to a pot, cover with water, and add 1 tablespoon salt.
Cook on medium heat for 20 mins or until fork tender. Drain and return to the pot.
Add 4 tablespoon butter or ghee, salt and pepper, and enough chicken stock to make creamy - 1/2 cup.
Mash potatoes to desired consistency. Add more stock as needed.
Serve with our smoked turkey breast and pan gravy! Enjoy!
