Mashed Potatoes With Lemon Herb + Roasted Garlic Sauce
You’ll need: red potatoes, roasted garlic, silken tofu, olive oil, nutritional yeast, lemon juice, fresh thyme, sea salt, onion powder.

Boil your red potatoes for 20-30 minutes until fork tender.

While they boil, make the creamy sauce by adding the remainder of the ingredients to a small blender (or use an immersion blender.)

Blend until completely smooth and creamy. 😍

Drain your potatoes and pour the creamy sauce in.

Use a potato masher to stir in the sauce and mash the potatoes.

Serve topped with fresh minced thyme and enjoy!
